Bajo el lema Innovamos hoy, alimentamos el ma\u00f1ana, la jornada fue inaugurada por director general de Pesca, Acuicultura e Innovaci\u00f3n Tecnol\u00f3gica de la Conseller\u00eda del Mar, C\u00e1ndido Rial, y el presidente de Anfaco-Cytma, Iv\u00e1n Alonso-J\u00e1udenes Curbera, quien subray\u00f3 \u00abel valor estrat\u00e9gico de la colaboraci\u00f3n entre industria, centros tecnol\u00f3gicos y Administraci\u00f3n para acelerar la innovaci\u00f3n, impulsar la sostenibilidad y reforzar la competitividad del complejo mar-industria\u00bb, explica la patronal conservera en un comunicado.<\/p>\n\n\n\n<p>En el bloque dedicado a nuevos ingredientes alimentarios, se abordaron soluciones para el desarrollo de prote\u00ednas alternativas, fermentos y nuevos ingredientes de origen marino con aplicaciones directas en alimentaci\u00f3n. Tambi\u00e9n se analiz\u00f3 el empleo de tecnolog\u00edas computacionales, que est\u00e1 acelerando el desarrollo de nuevos ingredientes y abriendo las puertas hacia una nueva generaci\u00f3n de alimentos funcionales y nuevas estrategias de valorizaci\u00f3n.
